One thing that has really improved my beef cooking skills is using the RoastPerfect app, from Certified Angus Beef® brand. Honestly there’s no reason not to roast. Roasting is actually my way of cooking beef because once its in the oven most of the work is done. Besides checking the temperature to know when it’s ready you can relax while it cooks. Another great thing is that a roast, in the oven smells incredible. No scented candle can match up to that aroma!

- Whatever you do make sure not to scrub your pan clean. Instead just line it with two layers of foil. You’ll appreciate it in the run.
- Don’t have a pan with a rack? If you don’t have the time to purchase one simply take out a piece of aluminum foil crumple it up into an aluminum foil snake and shape it into a loose coil. There you go! An instant roasting rack.
- If you enjoy using herbs or spices, with beef roasts feel free to include them. Seasoning a New York strip roast is simple. Even just a sprinkle of salt and pepper will do the trick.
- A cut of beef known as strip roast goes by names such, as Kansas City Strip roast, New York Strip roast, strip loin roast or top loin roast. This type of meat is known for being lean, tender and bursting with flavor. If you’re interested, in exploring beef cuts you can find more information here.
- I prefer using a thermometer by inserting it before cooking. That way I don’t have to worry about losing the juices when I insert the thermometer on.

Ingredients
- 3 pounds New York strip roast Certified Angus Beef® brand
- sea salt
- Fresh ground black pepper
- Salt-free steak seasoning
Instructions
- Preheat the oven to 425 degrees Fahrenheit. Prepare a roasting pan by lining it with foil, for cleaning. Insert a rack into the pan. (If you don’t have a rack crumple up a piece of aluminum foil, into a coil and position it in the roasting pan.)
- Make sure to add an amount of sea salt, black pepper and steak seasoning to all sides of the roast pressing it gently onto the surface for it to adhere. If you happen to have a meat thermometer feel free to insert it into the thickest part of the roast at this point before placing it in the oven.
- Place the seasoned roast fatty side up on the roasting rack. Roast for 15 minutes at 425 F.
- Lower the temperature to 325 degrees Fahrenheit. Cook for approximately 45 minutes or until the meat thermometer shows a reading of 135 140 degrees Fahrenheit. I typically check around the 30 minute mark to account for variations, in cooking time especially if the roast is, on the side.
- Remove roast from oven and let rest 15 minutes. Slice across the grain to serve.
I spent a good bit of my 20’s touring the country playing music. As a teenager, and throughout my 20’s, in between music, I always worked in restaurants, in various capacities. Somewhere in my late 20’s I realized that I was not on the cover of Rolling Stone, as planned, and so, I started thinking about my future and trying to figure out other ways to have an impact, be creative and still live a bit of that rock ‘n roll lifestyle. The restaurant industry provided me with a good bit of those things. And so, I started honing my chops in the kitchen, putting my nose in food lover’s companion, and really started to go somewhere with it.
